Recipe of the Month: Southwestern Salad Bowl
Ingredients:
Mixed Greens
Handful of grape tomatoes
2 green onions, sliced
2 small baby bell peppers, red, yellow or orange, diced
1/2 cup black beans
1/2 cup fresh sweet corn kernels
1 tbsp. toasted pumpkin or sunflower seeds
1 ripe avocado, diced
2 tbsp. grated cotija cheese
A handful of tortilla strips
Directions:
Toss with Cilantro Lime Vinaigrette
1/2 cup virgin olive oil
1 tbsp. cider or rice vinegar
1 tbsp. balsamic vinegar
1 tbsp. fresh lime juice
Dash chipotle sauce
1 clove garlic, minced
1/2 cup chopped fresh cilantro
1/2 teaspoon oregano
Salt and pepper to taste
